red bean ice cream bars

red bean ice cream bars
{this recipe just happens to be a favourite traditional Chinese dessert
that Jacqueline remembers her papa making when she was just a little girl}

Makes 4 to 6 bars

1/2 cup sugar
3 egg yolks
1 cup whole milk
*1 cup red bean paste
*1/2 cup of semi-whole red beans
1-1/2 cups heavy cream
ice cream moulds

*found in the Asian section of your local Supermarket
if you are unable to find red beans, kidney beans can be substituted

1. Beat sugar and egg yolks together in medium bowl until pale yellow

2. Bring whole milk to a boil in medium saucepan and remove from heat. Whisk into egg mixture and pour entire mixture back into saucepan. Stir constantly over medium-low heat with a whisk until custard thickens {about 5 mins.} making sure to scrape bottom of pan.

3. Strain custard into a clean bowl. Mix in red bean paste and semi-whole red beans; stir in heavy cream.

4. Cover and refrigerate overnight before processing, according to ice cream maker's instructions.

5. Pour into ice cream moulds and freeze until firm.

Oh Koralee! I just went over to Jacqueline's blog and I am enchanted! LOVE IT! And I have had green tea ice cream with red beans when I was in Japan many years ago.....SO DELICIOUS! Isn't ice cream the perfect venue for trying the unexpected flavors? The most OUTRAGEOUS flavor I have ever heard of but have never tried is GARLIC ice cream! That is actually sold at Sebastian Joe's here in town, but Gilroy, California is the garlic capitol of the states and they also make this ice cream!

Koralee, when I first saw this in your lovely book I was immediately transported back to my childhood - I grew up in Asia, so I got my first taste of this type of ice cream way back then!

Oooo! MOLLY IS HOME! Now you must be extremely giddy, over-joyed, filled to overflowing, and I too wish I could sit with you over a cuppa of a nice strong black tea, with milk, of course! And we too are having rainy day after rainy day, but how green are our gardens! The sun has to come out at some point!

Oh my my friend! Not only did you bring me a huge smile this morning with your visit...but when I came here and I was greeted with a red bean paste treat...be still my heart...this is a staple on my shelf along with a ton of other Asian condiments : ) I love red bean paste pastries...but now I will be making this for the family this coming weekend...my daughter is going to FLIP!!!!! thank you thank you thank you...can't wait!
