~light as air~

my favourite fruit has to be the raspberry


so that is why I was so delighted when my daughter wanted to make this yummy light as air pie for our Easter dessert......it is truly a family favourite......my mom made it for me growing up and every time we go to grandma's house my daughter's request it. The great thing about this pie is that you can use any fruit you like... peach and strawberry...and it is super easy......

1 pkg (4-serving size) Jell-o raspberry
2/3 cup boiling water
2 cups ice cubes
4 cups thawed Cool Whip whipped topping
1 cup lightly crushed raspberries
1 prepared graham cracker crumb crust
dissolve gelatin in boiling water. Add ice cubes and stir constantly until gelatin starts to thicken, 3 to 5 minutes. Remove any unmelted ice.
whisk in whipped topping gently until smooth. Fold in fruit. Chill until think, about 15 minutes.
Spoon into crust. Chill 3 hours.
for strawberry pie...add strawberries and strawberry gelatin and for peach add all peach ingredients

Wow...that looks absolutely fabulous! And it does not a hurt a bit that it sits on a lovely plate too. And I love that you have family recipes that are passed down. I have started photographing my girls helping in the kitchen and even just eating a family favorite (they look cute...promise) to put in cookbooks I will make for them on their wedding days. I hope they will be in the family for years to come.

DO YOU KNOW THAT EVERY MORNING WHILE BLOGGING, and often when I am at your blog dearest, I AM EATING MY RASPBERRIES!!!!! Do you also know that my mum used to make this exact same pie with ORANGES????OH DEAR, every time she made it was a refreshing treat. GREAT PICTURES of one of nature's prettiest little gems indeed! THEN BLUEBERRIES ARE MY NEXT FAVORITE, and when Ruben and I go walking, we snatch wild raspberries off the bushes!!! They will be out in July/August! Oh dear Koralee, it is so good to know that you are getting some relief!!! Well, if you have to take meds, so be it. I just pray that you will get back to normal soon and yes, exercise in the right doses is good for me! My back is good, and I am surprised after all that lifting (naughty me!) I am just fine. But there is still a twing on my right thigh. Ohhhhh, what a glorious weekend, but today at work, I had to put to practice all the things I try to set before me as my goals for daily living. I hope your Easter was wonderful! Your family must have loved this dessert! Everyone here loved the bunny cookies and the pink cinnamon buns! Amanda's boyfriend's family just LOVED them!

My Bo always begs me to buy raspberries but since strawberries are cheaper I always get him a box of strawberries...which he eats in one day....seriously like 3 boxes a week :) But that raspberry pie would really make him happy! & me too :)

We so RARELY had dessert when I was growing up, but this was one of my favorites! Instead of a pie, though, she'd put it in a graham cracker crust in the bottom of a 9x13 pan. Yummmm.

It looks like summer overhere . All days in the garden until evenings late ! Can you imagen ? I'm so happy with all this sunshine .Sitting in my new garden ... enjoying all my privacy and having so many new ideas . Since I am at home I can make my space more and more ME ME ME . I am doing things that make me happy . I am finding myself again . That is so special . I love to have time for all of this . PRECIOUS ONE!!!! Oh was I tired last night! I ate dinner and read a bit and then I WAS OUT!!!! But I have not had any more pain! I think what did the trick was that I stretched!!!!!! Even after that lifting session of iron urns this weekend didn't affect me, and it seems the only thing I did differently was STRETCH! You would think having been a dancer I would do it more often, but who has time? BUT NOW I THINK I BEST KEEP IT UP! AND YOU....YOU are feeling back to your old self? PRAISE GOD! I am so glad to hear that dearest, SO GLAD! We are counting down the days to SPRING HERE...rain is dominant at the moment, and even a threat of a little snow, YES!!! But we shall rejoice in the promise of spring and I will be dancing....LOVE TO YOU BEAUTIFUL KORALEE...and I just had my raspberries!!! Anita
