these were so fun to make
and the batter is oooooh-so-pretty
that I had to share the recipe today
{recipe found in the calgary herald}
make sure you get to your local farmers' market soon
while there grab yourself some flowers
because
you are soooooo worth it

Thanks for sharing! They almost look too pretty to eat. Would have never thought of adding beets to a cupcake:) I must ask, what program do you use to create the adorable lil paper sheets with the paperclip? Love it! Thanks and happy Monday:)

Now, I don't think I have ever heard of beet cupcakes....
but you could probably eat a dozen cause actually you are eating vegetables...RIGHT???
I LOVE the farmers market. I love the produce, the crafts, and just the whole spirit of it all.

Beautiful pictures, and I bet those cakes taste delicious! I imagine the beets give the same effect as carrots in carrot cake (one of my favourites) and make it nice and moist? I LOVE the little paper clipped recipe sheets....such a pretty post, Koralee!

Beets do have a Lovely hue to them and it is probably very healthy to add them to our Desserts for a great color enhancer. Though I can't have Chocolate I may still try this Beet method with some other cupcake flavor, thanks for sharing!
